The restaurant industry in Yucatan has a strong impact in the national context, which is reflected in the opening of more establishments, even with an international presence, that enrich the gastronomic offer, says Ignacio Alarcón Rodríguez Pacheco, president of the National Chamber of the Restaurant Industry and Seasoned Foods (Canirac).
According to the leader, two factors that contribute to the sector’s growth in the state are public safety and the arrival of more tourists.
He also says that technology has become a great ally, “the second seller” of these establishments, as it has made it possible to automate operations and improve service with the support of digital applications.
The businessman from Puebla, who assumed the presidency of Canirac at the beginning of last March, visited Mérida to take the oath, last Wednesday, to Claudia González Góngora as re-elected president of the Chamber in Yucatán.
In the case of Yucatán, it says that at the end of 2023, 16,636 food-related business units were registered.
“For Canirac, Yucatán is one of the most important states, for everything it entails,” he maintains. “The security sector has grown here because many nationally and internationally recognized brands have arrived.”
“You have a lot of impact at the national level. Look at how much tourism is arriving today, how many flights. That also shows that the economy is moving very fast.”
The leader of the restaurateurs indicates that tourism and gastronomy go hand in hand and many people come to Yucatan attracted by the regional food, which is well known throughout the world, and also by the offer that has grown with the mixture of other cuisines, National and international.
“In Quintana Roo and the state of Baja California Sur, many brands are arriving due to the growing demand for the service and the economy that drives tourism,” he adds. “The same thing happens in Mexico City and Monterrey is also growing a lot. I believe that investments have not stopped, the same as in Mérida.”
Regarding the crime that plagues a good part of the country, the president of Canirac points out that the issue of working closely with governments on the security aspect occupies an important place in his work program. “Today we are experiencing crises in some states,” he points out. “Fortunately not here in Yucatán, but in other states, the issue is a bit delicate, because people, seeing insecurity and problems in a city, no longer go out. And by not going out, they don’t go to restaurants and the businesses begin to falter.”
