Ingredients:

For the mango layer:

  • 2 ripe mangoes, peeled, pitted, and cubed
  • 1/2 cup heavy cream
  • 1/4 cup condensed milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin powder
  • 2 tablespoons cold water

For the cherry layer:

  • 1 cup fresh or frozen cherries, pitted and halved
  • 1/4 cup water
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon gelatin powder
  • 2 tablespoons cold water

Instructions:

Mango Layer:

  1. Prepare Gelatin: In a small bowl, sprinkle the gelatin powder over the cold water. Let it sit for a few minutes to bloom.
  2. Blend the Mango: In a blender, puree the ripe mango cubes until smooth. Set aside.
  3. Heat Cream and Condensed Milk: In a saucepan, gently heat the heavy cream and condensed milk over low heat until they are combined. Do not bring it to a boil.
  4. Incorporate Mango Puree: Remove the cream mixture from the heat and whisk in the mango puree and vanilla extract until well combined.
  5. Melt Gelatin: Microwave the bloomed gelatin for about 10-15 seconds until it’s completely melted. Stir it into the mango mixture until the gelatin is fully incorporated.
  6. Assemble the Mango Layer: Pour the mango mixture into individual serving glasses, filling them about halfway. Place the glasses in the refrigerator and allow the mango layer to set for at least 1 hour.

Cherry Layer:

  1. Prepare Gelatin: Similarly, sprinkle the gelatin powder over cold water in a small bowl and let it bloom.
  2. Cook Cherries: In a saucepan, combine the cherries, water, sugar, and lemon juice. Cook over medium heat until the cherries soften and release their juices. This should take about 5-7 minutes.
  3. Blend and Strain: Transfer the cherry mixture to a blender and blend until smooth. Strain the mixture through a fine-mesh sieve to remove any solids.
  4. Melt Gelatin: Microwave the bloomed gelatin for 10-15 seconds to melt it. Stir it into the cherry mixture until fully incorporated.
  5. Assemble the Cherry Layer: Gently pour the cherry mixture over the set mango layer in the glasses. Return the glasses to the refrigerator and allow the dessert to set for another 1-2 hours, or until completely firm.

Once the jelly has fully set, your creamy mango and cherry jelly is ready to be enjoyed. Serve it chilled, garnished with fresh mango slices, cherries, or a sprig of mint for an extra touch of elegance.
