Instructions:

  1. Preheat the oven to 325°F.
  2. In a large bowl, mix the graham cracker crumbs, sugar, and melted butter together until well combined. Press the mixture into the bottom of a 9-inch springform pan and set aside.
  3. In another large bowl, beat the cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Pour the cheesecake filling into the prepared crust and smooth the top with a spatula.
  5. Bake the cheesecake for 50-55 minutes, or until the edges are set and the center is slightly jiggly.
  6. Remove the cheesecake from the oven and let it cool for 10 minutes. Spread the sour cream over the top of the cheesecake and return it to the oven for 5 more minutes.
  7. Remove the cheesecake from the oven and let it cool to room temperature. Chill the cheesecake in the refrigerator for at least 4 hours before serving.
