Vegan ceviche is an easy and healthy recipe to prepare at home

A vegan ceviche is a plant-based version of the traditional ceviche dish that is typically made with seafood, such as shrimp or fish, that is marinated in lime juice and spices. In a vegan ceviche, the seafood is replaced with vegetables or plant-based proteins that are also marinated in lime juice and spices to give it a similar tangy and flavorful taste.

Ingredients:

  • 1 can of hearts of palm, drained and chopped
  • 1 large ripe tomato, diced
  • 1 avocado, diced
  • 1 small red onion, diced
  • 1/2 cup chopped cilantro
  • Juice of 2 limes
  • 1 tbsp olive oil9
  • Salt and pepper to taste
  • Tortilla chips or tostadas, for serving

Instructions:

  1. In a large mixing bowl, combine the chopped hearts of palm, diced tomato, avocado, red onion, and chopped cilantro.
  2. In a separate bowl, whisk together the lime juice, olive oil, salt, and pepper to make the dressing.
  3. Pour the dressing over the vegetables and mix well to combine.
  4. Chill the ceviche in the refrigerator for at least 30 minutes to allow the flavors to meld together.
  5. Serve the ceviche with tortilla chips or tostadas on the side.
