- Tortilla chips or tostadas, for serving
Instructions:
- In a large mixing bowl, combine the chopped hearts of palm, diced tomato, avocado, red onion, and chopped cilantro.
- In a separate bowl, whisk together the lime juice, olive oil, salt, and pepper to make the dressing.
- Pour the dressing over the vegetables and mix well to combine.
- Chill the ceviche in the refrigerator for at least 30 minutes to allow the flavors to meld together.
- Serve the ceviche with tortilla chips or tostadas on the side.
