Cochinita pibil, perfect for every meal!

Cochinita pibil is a traditional Mexican dish that originated in the Yucatan region. It is made with pork marinated in a blend of spices and cooked until it’s tender and juicy. Here’s a recipe to make cochinita pibil at home:

Ingredients:

For the pork:

  • 2 lbs pork shoulder or pork butt, cut into chunks
  • 1 cup orange juice
  • 1/2 cup lime juice
  • 4 garlic cloves, chopped
  • 2 tbsp achiote paste
  • 1 tsp dried oregano
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 1/2 tsp ground allspice
  • Salt and pepper to taste

For serving:

  • Corn tortillas
  • Pickled onions
  • Cilantro
  • Lime wedges

Instructions:

  1. In a large bowl, mix together the orange juice, lime juice, chopped garlic, achiote paste, oregano, cumin, cinnamon, allspice, salt, and pepper.
  2. Add the pork chunks to the bowl and stir to coat them well in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight.
  3. Preheat your oven to 325°F.
  4. Remove the pork from the marinade and place it in a large baking dish. Pour the marinade over the pork.
  5. Cover the dish with foil and bake for about 3-4 hours or until the pork is very tender and falls apart easily.
  6. When the pork is done, remove it from the oven and let it rest for a few minutes.
  7. Serve the cochinita pibil with warm corn tortillas, pickled onions, cilantro, and lime wedges on the side.
