Merida seeks to promote so-called “eco-restaurants”, establishments that seek to reduce the “carbon footprint” in their production processes and be more friendly to the environment…
MERIDA — This initiative will be done with the support and coordination of the global organization Local Governments for Sustainability (ICLEI), the National Chambers of Commerce of Merida, and the National Industry of Restaurants and Seasoned Foods, as well as the Mexican Association of Hotels of Yucatan, among others.
The local council will promote the “Environmentally Responsible Certification for restaurants in the city”, announced the head of the Directorate of Municipal Sustainable Development, Sayda Rodríguez Gómez.
In an interview, she reported that the agency promotes this certification that will benefit the industry by reducing its carbon footprint, and meet the demands of new generations of consumers who identify with establishments that are responsible for the environment.
“The certification will recognize good practices in the treatment of waste, energy consumption, water care, forest culture and inclusion, among others,” she said.
“In this, three levels of recognition will be promoted according to the number of social responsibility actions carried out by each restaurant; which are gold, silver and bronze,” stressed the municipal official.
She said special mention will be given to those known as “farm to table” restaurants, those that have bike-parking or promote the use of bicycles among their employees, use renewable energy in a percentage or have spaces for pets, among others.
