A little bit of South Texas has come to North Merida with the recent opening of the BBQ Republic restaurant, featuring Texas-style slow-cooked brisquet, ribs, pulled pork, sausage and more mouth-watering dishes.
A life-long cooking enthusiast, BBQ Republic owner Antonio Aviles travelled to many parts of the United States to research barbecue styles before homing in on two San Antonio, Texas-area eateries to provide the model for his new Merida restaurant.
Working with the owners of these Lockhart, Texas restaurants, Aviles acquired the recipes and know-how to prepare authentic slow-cooked barbecue dishes. He bought and imported a special wood-fired oven that uses mesquite to prepare BBQ Republic’s savory meats.
“All of our food is prepared fresh the same day, except for the brisquet, which has to start cooking the night before it’s served,” said Aviles.
The interior of the new BBQ Republic restaurant, located at #336 Avenida Garcia Lavin in San Antonio Cucul neighborhood of San Ramon Norte, also reflects the warm ambience of a Texas-style restaurant. Outfitted with cozy booths, wood-plank tables and exposed wood rafters, the two-story restaurant seats up to 95 patrons.
Equipped with wall-mounted flat screen TVs, BBQ Republic encourages customers to enjoy live sports broadcasts while they savor their meals and drinks, which include a variety of beers and other beverages.
From 1-6 p.m. Monday through Friday, BBQ Republic offers special lunch meal prices including meat, sides and dessert starting at $89 pesos (USD$5.60).
